Who else is making a Snack Platter for NYE?! We recently tested out a new snack recipe using our Acacia honey. They are a healthy version of the well-known rice Krispie treats. These have no marshmallows or refined sugar added. They are made using pure peanut butter and honey. Easy to make, and pair so well with fresh fruit! - 2/3 Cup Peanut Butter
- 1/3 cup of Organic German Acacia Honey (Buy it on Amazon)
- 2 TBSP Coconut Oil
- 3 Cups of Rice Krispies
- 1 TSP Vanilla extract
- Dark Chocolate (optional)
- Sea Salt (optional)
Line a pan with parchment paper. In a pot over low heat, melt the peanut butter, honey, coconut oil, and vanilla extract together. Once combined, stir in the Rice Krispies. Scoop into pan and press down with a spatula until it's even and flattened. Pour over the melted chocolate and sprinkle with a pinch of sea salt. The chocolate is optional, they taste great on their own. Place the pan in the fridge to harden the chocolate, it takes approximately 1 hour. Bars will keep for about 1 week.
