Chia pudding is such an easy healthy treat! We especially love combining Bee Seasonal Angico honey with mangos... the tropical character of this honey varietal pairs so nicely with the flavor of mangos! Something we also love about chia pudding is that you can prepare it ahead of time or even the night before, for a quick breakfast option. Our friend Regina came up with this summery recipe. This recipe makes two portions
Ingredients for chia seed pudding layer:
For the mango smoothie layer:
- 1 ripe mango
- 1 banana
- 1/2 cup cashew milk
- 1/2 tsp Brazilian Acacia - Angico
- 1 tbsp coconut chips
- Additional mango diced, blueberries, mint
In a small bowl or jar mix all ingredients for chia seed pudding layer and set aside for about 15-20 minutes.
In a blender puree all the ingredients for mango smoothie until nice and smooth.
In small jars or glasses layer the bottom with mango smoothie first, then top it with chia seed pudding. Decorate with additional diced mango, blueberries, and mint.
