Organic Honey Zucchini Bread

Bee Seasonal Organic Honey Zucchini Bread
I went on a Zucchini kick the other week and it lasted a whole 5 days or something. Thomas was a little burnt out on them after eating them for almost a week straight! I made so many different recipes, some savory and others sweet. This bread being one of them. We hope you enjoy this one as much as we did!! =))
Honey Zucchini Bread 
2 cups of grated zucchini 
2 eggs 
1/2 cup of applesauce 
3/4 cup Melato Forest Honey 
1 tsp vanilla extract 
2 tsp cinnamon
1 tsp nutmeg
3 shakes of ground cardamon 
3 shakes of clove 
5 shakes of ground ginger 
1 tsp baking soda 
2 tsp baking powder 
Pinch of salt 
1 cup pastry flour 
1 cup whole wheat flour 
Preheat oven to 350F. Line pan, we coat the pan with butter. In a large bowl, mix together the eggs, applesauce, honey, vanilla and salt. Add in the zucchini and mix. In a separate bowl mix together the flours, baking soda, baking powder, and ground spices. Add the dry mixture to the wet, and mix gently. Pour the batter into the baking pan and bake for about 55 minutes. Until the toothpick comes out clean. Once removed from oven allow to cool for 15 minutes until transferring to wire rack.
