Quinoa Porridge with Honey
Most of us are used to eating Quinoa as a savory meal, but its actually quite nice when prepared with fruit and honey. We used to make quinoa while camping as breakfast, we cooked it with some apple juice and topped with honey and fruit berries. It was yummy. Check out this recipe for us using our Marmeleiro honey, we can't wait to hear what you think of it!
Servings: 2
Cooking time: 30 minutes
Ingredients:
- 1/2 cup tricolor quinoa
- 1 cup of soy milk
- 1 tsp cinnamon
- 2 tbsp Brazilian Quince - Marmeleiro (Buy it on Amazon)
- 1 tsp coconut oil
- 1 persimmon, diced
For the topping: coconut flakes, pomegranate seeds, pecan, extra honey
Directions:
- In a medium saucepan put the quinoa, add soy milk and bring to a boil. Low the heat, cover with a lid, and cook until quinoa cooked about 20 minutes. Stir in the honey, cinnamon, and coconut oil. Let sit covered for 3 minutes, then serve with diced persimmons, pomegranate seeds, coconut flakes, and pecan.
