Carrot Honey Donuts with Chai Glaze
Donuts can be super decadent - but baked donuts are such a great alternative! =) You can make your own homemade "healthier" glaze as well. These donuts are filled with carrots and honey, so basically carrot cake in the shape of a donut. YUMMY! Also, Regina added some turmeric to give these a beautiful color, golden orange. The white chocolate chai glaze pairs beautifully with the Silvestre honey. Enjoy these donuts with a cup of coffee or a chai tea latte.
Servings: 16 mini donuts
Cooking time: 1.5 hour
Ingredients for the batter:
- 5 medium carrots, shredded
- 2 large eggs
- ¾ cup of whole milk
- ¼ cup of plain yogurt
- 1 cup of flour
- 1 tsp of baking powder
- 1 tbsp of turmeric powder
- ½ tsp of cinnamon
- ¼ cup of dark brown sugar
- ¾ jar of Brazilian Iguaçu River Wildflower - Silvestre (Buy it on Amazon)
- 4 tbsp of melted butter
- 1 tsp of vanilla extract
For the chai spiced glaze:
- 1 ½ cup of white chocolate chips
- ½ cup of whole milk
- 2 bags of spiced chai tea
Directions:
- Preheat the oven at 375F. Grease the donut pan with some flour and oil (of your choice).
- In a medium bowl, mix flour, turmeric, baking powder, and cinnamon. Stir to combine.
- In a different large bowl, whisk the eggs with Silvestre Honey and brown sugar until pale. Stir in the yogurt and vanilla extract and whisk to combine. Add in the half of flour mixture and milk, continue whisking with the spatula until smooth. Add the remaining flour and milk and stir well. Add in the melted butter. With a wooden spatula, stir in the shredded carrots.
- Pour the batter into the prepared donut pan and bake for 12-15 minutes until the donuts are fully cooked. If you have a larger pan, you will end up with about 10 donuts. Cool them down completely on a rack.
- To make the chai spiced glaze, warm up the milk until hot but not boiled, add in the spiced chai tea and let it sit for 5-7 minutes. Remove the tea bags from the milk. In a double boiler water bath, combine white chocolate and spiced chai milk and stir until the chocolate is fully melted. Let it cool and cover donuts.
