The Honey

In late summer, a wonderful natural spectacle takes place in the northern German heathland. Vast, delicate purple seas of flowers emerge and form a picturesque contrast to the dark green Douglas firs, red oaks, and sand pines. The bees prepare a characterful and tart honey specialty from the nectar of the small heather blossom bells of the common heather (Calluna vulgaris). This honey pairs specially well with whole grain breads, pumpernickel, and strong cheeses.
