Rye Honey Christmas Cake
This cake is so simple and gives off all the holiday-Christmas vibes! Its made with rye flour and lots of Bee Seasonal Aroeira honey! We topped it with sugared cranberries to give it a festive look and rosemary for garnish. Give this recipe a try and let us know what you think! Ingredients:
Dry:
1 cup of rye flour
1 cup of pastry flour
7 TBSP cocoa powder
2 tsp baking powder
1 tsp baking soda
pinch of salt
Wet:
4 small eggs or 3 large ones
1/2 cup coconut milk
1/2 cup coconut cream
2/3 cup AROEIRA HONEY Brazilian Pink Pepper - Aroeira (Buy it on Amazon)
2/3 cup avocado oil
1/3 cup mini chocolate chips
Directions:
Preheat oven temperature to 400F. Use a springform (with a hole) or I am pretty sure most pans will work. Butter the pan with butter and dust with flour. Mix together dry ingredients in a bowl. In a separate bowl, beat the eggs for one to two minutes. Then add in the coconut milk, honey, and oil, and stir together. Slowly add the dry mixture until combined. Add in the chocolate chips and use a spatula to gently fold together. Pour the batter into the cake pan and bake for about 22-24 minutes. Remove from oven and allow to cool for about 15 minutes before transferring to wire rack. We like to enjoy this cake fresh, and with some vanilla ice cream!
